- 500 g herring fillets, cleaned and deboned
- 1 cup water
- 1 cup white vinegar
- 1 cup sugar
- 1 tbsp salt
- 1 tbsp whole black peppercorns
- 1 tbsp mustard seeds
- 1 onion sliced thinly

In a saucepan, combine water, white vinegar, sugar, and salt. Heat over medium until sugar and salt dissolve completely. Remove from heat and let cool.

Layer the herring fillets in a clean glass jar, alternating with thin slices of onion.
