Dive into the tangy delight of pickled herring, a Scandinavian classic that marries tender fish with a sweet and sour brine, perfect for a festive appetizer or a cozy weeknight treat.

Ingredients

  • 500 g herring fillets, cleaned and deboned
  • 1 cup water
  • 1 cup white vinegar
  • 1 cup sugar
  • 1 tbsp salt
  • 1 tbsp whole black peppercorns
  • 1 tbsp mustard seeds
  • 1 onion sliced thinly

Method

    In a saucepan, combine water, white vinegar, sugar, and salt. Heat over medium until sugar and salt dissolve completely. Remove from heat and let cool.

    Layer the herring fillets in a clean glass jar, alternating with thin slices of onion.

    Add the whole black peppercorns and mustard seeds between the layers if using.

    Pour the cooled brining liquid over the herring and ensure that the fillets are completely submerged.
