- 1 kg beef bones
- 500 g beef brisket
- 1 large onion
- 1 piece ginger
- 2 sticks cinnamon
- 4 pieces star anise
- 1 tsp black peppercorns
- 250 g rice noodles

- for serving lime wedges
- for serving bean sprouts
Method

In a large pot, add the beef bones and cover with cold water. Bring to a boil and let boil for 5 minutes. This helps to remove impurities.

Drain the bones and rinse them under cold water. Return the cleaned bones to the pot and add 3 liters of fresh water.

Add the charred onion, ginger, cinnamon, star anise, and black peppercorns to the pot. Simmer on low heat for about 3 hours, skimming off any foam that rises to the top.

After 3 hours, strain the broth through a fine mesh sieve into a clean pot. Season the broth with fish sauce according to taste.

Cook the rice noodles according to the package instructions, then drain and rinse under cold water.

To serve, place a portion of the noodles in a bowl, top with the raw beef brisket slices, and pour the hot broth over to cook the meat.
