Experience the hearty flavors of traditional pemmican, a nutrient-dense blend of dried meat, berries, and rendered fat. Ideal for outdoor adventures or a quick energy boost on busy days.
IngredientsWhat you need
- 453.6 g dried meat (beef or bison)
- 0.5 cup dried berries (blueberries, cranberries, or cherries)
- 0.25 cup rendered fat (tallow or lard)
- 1 teaspoon honey
- 1 teaspoon salt
- 0.5 cup nuts (optional)
Method
- 1
Begin by finely shredding or grinding the dried meat until it resembles coarse flour.
- 2
In a large bowl, combine the shredded meat with dried berries and chopped nuts (if using).
- 3
Melt the rendered fat (tallow or lard) in a small saucepan over low heat.
- 4
Pour the melted fat over the meat and berry mixture, then mix thoroughly to combine all ingredients.
- 5
Add honey (if using) and salt to the mixture, then stir until everything is evenly incorporated.
- 6
Press the mixture firmly into a mold or onto a baking sheet lined with parchment paper to form a flat slab.
- 7
Allow the pemmican to cool and harden at room temperature, then cut into bars or pieces for storage.
- 8
Store the pemmican in an airtight container in a cool, dry place, or refrigerate for longer shelf life.
