Indulge in a delightful Peach & Almond Alaska, where creamy vanilla ice cream meets sweet peach halves and crunchy flaked almonds. This charming dessert is perfect for a summer gathering or a cozy weeknight treat.
Toasted Almonds
What you need
- 80 g flaked almonds

Preheat the grill to heat up. Toast the almonds on a tray, keeping a close eye on them and removing as soon as lightly golden.
Peach Layer

- 1 tin peach halves in juice

Slice up the peaches and divide between four ovenproof bowls, along with their juice.
Ice Cream Layer
What you need
- 4 scoops vanilla ice cream

Place a nice round scoop of ice cream on top of each bowl and put in the freezer.
Meringue
What you need
- 2 large eggs
- 100 g golden caster sugar
Method

Separate the eggs. Put the whites into the bowl of a free-standing mixer, add a pinch of sea salt and whisk until the mixture forms stiff peaks.

With the mixer still running, gradually add the sugar until combined.

Spoon into a piping bag or a large sandwich bag that you can snip the corner off.
Assembly

Remove the bowls from the freezer and scatter over the toasted almonds. Pipe the meringue over the ice cream as delicately or roughly as you like.

Put the bowls under the grill for just 2 minutes, or until golden. Remove carefully and serve right away.
Notes
Save the egg yolks for another recipe.
