- 1 cup dried green split peas
- 6 cups water
- 1 medium onion
- 2 stalks celery
- 2 medium carrots
- 2 cloves garlic
- 1 teaspoon thyme

In a large pot, combine the rinsed split peas, water, onion, celery, carrots, garlic, thyme, and bay leaf.

Bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to low and cover the pot. Simmer for about 60 to 90 minutes, or until the peas are tender.

Stir occasionally, and add more water if needed to maintain your desired soup consistency.

Once the peas are soft, remove the bay leaf and use an immersion blender to puree the soup to your desired texture, or leave it chunky.
