- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 2 cups heavy cream
- 2 cups mixed berries

Preheat your oven to 120°C (250°F) and line a baking tray with parchment paper.

In a clean, dry bowl, beat the egg whites on medium speed until soft peaks form.

Gradually add the caster sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.

Fold in the vanilla extract, white vinegar, and a pinch of salt gently with a spatula until combined.

Spoon the meringue mixture onto the prepared baking tray, shaping it into a circle about 20 cm (8 inches) in diameter and creating a slight dip in the center.
