Indulge in a light and airy Pavlova, a classic Australian dessert that showcases crisp meringue topped with luscious whipped cream and vibrant mixed berries. Perfect for summer gatherings or special celebrations.

Ingredients

  • 4 large egg whites
  • 1 cup caster sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 cups heavy cream
  • 2 cups mixed berries
  • 1 tablespoon powdered sugar

Method

    Preheat your oven to 120°C (250°F) and line a baking tray with parchment paper.

    In a clean, dry bowl, beat the egg whites on medium speed until soft peaks form.

    Gradually add the caster sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.

    Fold in the vanilla extract, white vinegar, and a pinch of salt gently with a spatula until combined.

    Spoon the meringue mixture onto the prepared baking tray, shaping it into a circle about 20 cm (8 inches) in diameter and creating a slight dip in the center.

    Bake in the preheated oven for 1 hour and 30 minutes. Turn off the oven and let the pavlova cool completely in the oven with the door slightly ajar.
