Savor the comforting flavors of Papa Rellena, a Peruvian delight of seasoned ground beef encased in creamy mashed potatoes, then fried to golden perfection. Ideal for a cozy weeknight dinner or a festive gathering.
IngredientsWhat you need
- 1 kg potatoes
- 250 g ground beef
- 1 small onion
- 1 clove garlic
- 1 tblsp olive oil
- 2 tblsp green onions
- 1 tsp cumin
- 1 cup bread crumbs
- 2 large eggs
- oil for frying vegetable oil
Method
- 1
Boil the peeled and cubed potatoes in salted water until soft, about 15-20 minutes. Drain and mash them in a bowl.
- 2
In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent.
- 3
Add the ground beef to the skillet, cook until browned, and stir in the chopped green onions and cumin (if using). Season with salt and pepper to taste. Remove from heat and allow to cool slightly.
- 4
Take a portion of the mashed potatoes and flatten it in your hand. Place a spoonful of the meat mixture in the center, covering it with another layer of mashed potatoes. Shape it into an oval or round patty. Repeat with remaining ingredients.
- 5
Dip each patty into the beaten eggs, then coat with bread crumbs, ensuring they are fully covered.
- 6
Heat vegetable oil in a deep frying pan over medium heat. Fry the patties in batches until golden brown and crispy, around 3-4 minutes per side. Drain on paper towels.
- 7
Serve hot with your favorite sauce or as a side dish.
