- 1 cup semolina (sooji)
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- water as needed for dough
- 1 cup boiled and mashed potatoes
- 1/2 teaspoon black salt
- 1 cup pani (spiced water)
Method

In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Mix well.

Gradually add water to the mixture and knead into a smooth, stiff dough. Cover and let it rest for 15 minutes.

After resting, divide the dough into small balls. Roll each ball into a thin disc, about 2 inches in diameter.

Heat oil in a deep pan over medium heat. Fry the puris until they puff up and turn golden brown. Drain on paper towels.

In a separate bowl, mix the mashed potatoes with black salt and adjust seasoning as needed.
