Indulge in these delightful Austrian Palatschinken, thin crepes filled with sweet fruit preserves and dusted with powdered sugar. Perfect for a cozy weekend brunch or a charming dessert to impress your guests.
IngredientsWhat you need
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 2 tablespoons unsalted butter
- 1 tablespoon granulated sugar
- 1 pinch salt
- 1 cup fruit preserves or jam
- powdered sugar to taste for dusting
Method
- 1
In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, and salt until a smooth batter forms.
- 2
Let the batter rest for about 15 minutes to allow the flour to absorb the liquid.
- 3
Heat a non-stick skillet over medium heat and add a small amount of butter to coat the bottom.
- 4
Pour a small ladleful of batter into the skillet and swirl it around to evenly coat the bottom. Cook for about 1-2 minutes until the edges begin to lift and the bottom is lightly browned.
- 5
Flip the palatschinke and cook for an additional 1 minute on the other side. Remove and keep warm while you repeat with the remaining batter.
- 6
Spread a thin layer of fruit preserves or jam on each palatschinke, then roll them up neatly.
- 7
Dust with powdered sugar if desired, and serve warm.
