Indulge in these delightful Austrian Palatschinken, thin crepes filled with sweet fruit preserves and dusted with powdered sugar. Perfect for a cozy weekend brunch or a charming dessert to impress your guests.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1 pinch salt
  • 1 cup fruit preserves or jam
  • powdered sugar to taste for dusting

Method

    In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, and salt until a smooth batter forms.

    Let the batter rest for about 15 minutes to allow the flour to absorb the liquid.

    Heat a non-stick skillet over medium heat and add a small amount of butter to coat the bottom.

    Pour a small ladleful of batter into the skillet and swirl it around to evenly coat the bottom. Cook for about 1-2 minutes until the edges begin to lift and the bottom is lightly browned.
