- 200 grams fresh spinach leaves
- 200 grams paneer
- 1 medium onion
- 1 tablespoon ginger-garlic paste
- 2 medium tomatoes
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoon oil or ghee
- to taste salt
Method

Blanch the spinach leaves in boiling water for 2-3 minutes, then immediately transfer to ice water to retain color. Drain and blend to a smooth puree.

Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.

Add the chopped onion to the pan and sauté until golden brown.

Stir in the ginger-garlic paste and sauté for another minute until fragrant.

Add the pureed tomatoes and cook until the oil separates from the mixture.

Mix in the turmeric powder, salt, and spinach puree. Cook for about 5 minutes, stirring occasionally.

Add the cubed paneer and garam masala. Gently mix and cook for another 5 minutes to allow flavors to blend.
