Indulge in the delicate layers of Palačinky, a beloved Eastern European crepe filled with sweet jam or fresh fruit. Perfect for a cozy brunch or a delightful dessert, these thin pancakes are sure to bring smiles to your table.
IngredientsWhat you need
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 2 tablespoons butter
- to taste jam or fruit filling
Method
- 1
In a large mixing bowl, combine the flour, milk, eggs, sugar, and salt. Whisk until the batter is smooth and well combined.
- 2
Let the batter rest for about 15 minutes at room temperature. This allows the flour to hydrate.
- 3
Heat a non-stick skillet over medium heat and add a little melted butter to coat the pan.
- 4
Pour a ladleful of batter into the skillet, tilting the pan to spread it evenly into a thin layer.
- 5
Cook for 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Flip and cook for another minute on the other side.
- 6
Transfer the cooked palačinky to a plate and keep warm while you repeat the process with the remaining batter.
- 7
Serve warm with a spread of jam or fruit filling, rolling or folding them as desired.
