Savor the delightful crunch of Pajeon, a Korean savory pancake brimming with fresh green onions and vibrant mixed vegetables. Perfect for a cozy weeknight dinner or as a tasty appetizer at your next gathering.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon salt
  • 4 stalks green onions
  • 1 cup mixed vegetables
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 units eggs

Method

  1. 1

In a mixing bowl, combine the flour, water, and salt to form a smooth batter.

  2. 2

Stir in the chopped green onions and mixed vegetables until evenly coated with the batter.

  3. 3

Heat a non-stick skillet over medium heat and add the vegetable oil.

  4. 4

Pour half of the batter mixture into the skillet, spreading it evenly to form a pancake.

  5. 5

Cook for about 3-4 minutes until the edges are golden brown, then crack an egg on top and let it cook until the egg is set.

  6. 6

Flip the pancake carefully and cook for another 2-3 minutes until cooked through.

  7. 7

Remove the pancake from the skillet and repeat with the remaining batter, using additional oil as needed.

  8. 8

Serve hot, drizzled with sesame oil and accompanied by a soy dipping sauce if desired.
