- 400 g Bomba rice
- 1 liter chicken broth
- 200 g chicken thighs
- 200 g shrimp
- 100 g chorizo sausage
- 1 medium red bell pepper
- 1 medium onion
- 3 cloves garlic
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- 2 tablespoons olive oil
- salt to taste

In a large paella pan or skillet, heat the olive oil over medium heat.

Add the chopped onion and garlic, sauté until translucent.

Stir in the chicken thighs and chorizo, cooking until browned.

Add the red bell pepper, paprika, and saffron, cooking for another minute.

Pour in the Bomba rice, stirring to coat with the mixture.

Add the chicken broth and bring to a boil. Reduce the heat and simmer for 15 minutes without stirring.

After 15 minutes, add the shrimp on top of the rice, cover, and cook for an additional 5-10 minutes until the shrimp are cooked and the rice is tender.
