Ingredients

  • 100 g rice noodles
  • 150 g shrimp
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • 2 eggs large eggs
  • 3 tablespoons fish sauce
  • 1 tablespoon tamarind paste
  • 2 tablespoons brown sugar
  • 1 cup bean sprouts
  • 2 tablespoons chopped peanuts
  • 2 stems green onions
  • 1 lime lime wedges

Method

    Heat vegetable oil in a large pan or wok over medium-high heat.

    Add minced garlic and sauté for about 30 seconds until fragrant.

    Add shrimp to the pan and cook until they turn pink, about 3-4 minutes.

    Push the shrimp to one side of the pan and pour in the beaten eggs. Scramble the eggs until set.

    Add the soaked rice noodles to the pan, along with the fish sauce, tamarind paste, and brown sugar. Stir-fry everything together for about 2-3 minutes until noodles are heated through.
