Savor the bold flavors of Thailand with this Pad See Ew, featuring tender chicken, flat rice noodles, and crisp Chinese broccoli, all stir-fried in a savory sauce. Ideal for a cozy weeknight dinner that transports you to the streets of Bangkok.
IngredientsWhat you need
- 200 grams flat rice noodles
- 200 grams chicken breast
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 1 cup Chinese broccoli
- 2 cloves garlic
- 2 tablespoons vegetable oil
- 1 large egg
Method
- 1
If using dried rice noodles, soak them in warm water until they are soft. Drain and set aside.
- 2
Heat the vegetable oil in a large wok over medium-high heat. Add the minced garlic and sauté until fragrant.
- 3
Add the sliced chicken breast to the wok and stir-fry until fully cooked, about 3-4 minutes.
- 4
Add the Chinese broccoli and stir-fry for an additional 2 minutes until slightly tender.
- 5
Push the chicken and broccoli to the side of the wok. If using, crack the egg into the center and scramble until cooked.
- 6
Add the soaked rice noodles, soy sauce, oyster sauce, and sugar to the wok. Toss everything together until well combined and heated through, about 2-3 minutes.
- 7
Serve hot, garnished with extra soy sauce if desired.
