Savor the comforting flavors of Oyakodon, a traditional Japanese rice bowl topped with tender chicken thighs and silky eggs simmered in dashi, perfect for a cozy weeknight dinner or a quick lunch.

Ingredients

  • 2 pieces chicken thighs
  • 2 large eggs
  • 1 cup dashi stock
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 medium onion
  • 2 cups cooked rice
  • 2 stalks green onions

Method

  1. 1

Slice the chicken thighs into bite-sized pieces.

  2. 2

In a skillet, combine the dashi stock, soy sauce, mirin, and sliced onion. Bring to a simmer over medium heat.

  3. 3

  4. 4

Pour the beaten eggs over the chicken and onion mixture. Cover the skillet and cook for another 2-3 minutes, or until the eggs are set.

  5. 5

Serve the chicken and egg mixture over bowls of cooked rice.

  6. 6

Garnish with sliced green onions before serving.
