- 6 large egg yolks
- 200 g sugar
- 150 ml water
- 1 teaspoon vanilla extract
- 1 pinch salt
- 200 g almond meal
- 1 pack sugar cones
Method

In a saucepan, combine the water and sugar over medium heat. Stir until the sugar fully dissolves, then bring to a boil. Reduce heat and let simmer for about 5 minutes until slightly thickened.

In a separate bowl, whisk the egg yolks until smooth and light in color.

Slowly add the warm sugar syrup to the egg yolks while whisking continuously to temper the eggs. This prevents them from scrambling.

Return the mixture to the saucepan over low heat. Cook gently, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10 minutes).

Remove from heat and add vanilla extract and a pinch of salt. Mix well.

Let the mixture cool to room temperature, then spoon it into sugar cones or small dessert cups.
