Indulge in the sweet, rich flavors of Ovos Moles, a traditional Portuguese treat made with velvety egg yolks and almond meal. Perfect for a special occasion or a delightful dessert after dinner.

Ingredients

  • 6 large egg yolks
  • 200 g sugar
  • 150 ml water
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 200 g almond meal
  • 1 pack sugar cones

Method

  1. 1

In a saucepan, combine the water and sugar over medium heat. Stir until the sugar fully dissolves, then bring to a boil. Reduce heat and let simmer for about 5 minutes until slightly thickened.

  2. 2

In a separate bowl, whisk the egg yolks until smooth and light in color.

  3. 3

Slowly add the warm sugar syrup to the egg yolks while whisking continuously to temper the eggs. This prevents them from scrambling.

  4. 4

Return the mixture to the saucepan over low heat. Cook gently, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10 minutes).

  5. 5

Remove from heat and add vanilla extract and a pinch of salt. Mix well.

  6. 6

Let the mixture cool to room temperature, then spoon it into sugar cones or small dessert cups.

  7. 7

If desired, dust the tops with almond meal for added flavor and texture.

  8. 8

Serve chilled or at room temperature as a delightful Portuguese dessert.
