Indulge in Ostkaka, a traditional Swedish cheesecake that blends creamy milk, sweet almonds, and fragrant cardamom. Perfect for a cozy dessert after a hearty meal or a delightful treat at your next gathering.

- 1 cup rennet
- 2 cups sugar
- 1 cup almonds
- 1 teaspoon vanilla extract
- 1 teaspoon cardamom
- 2 eggs large eggs
- 1 pinch salt
Method

Heat the milk in a large pot until it reaches about 37°C (98°F).

Remove the pot from the heat and stir in the rennet. Let it sit for about 30 minutes until it curdles.

Once curdled, cut the curds into small pieces and gently heat them over low heat for 10 minutes.

Transfer the curds to a cheesecloth-lined mold or a baking dish. Press them down lightly to remove excess whey.

In a separate bowl, mix the sugar, almonds, vanilla, cardamom, eggs, and salt together. Pour this mixture over the curds in the mold.

Preheat the oven to 175°C (350°F) and bake the Ostkaka for about 60 minutes or until golden brown on top.

Once baked, let it cool at room temperature. Serve chilled or at room temperature, often with whipped cream and jam.
