Indulge in the comforting flavors of Omurice, a delightful Japanese fusion dish featuring fluffy eggs enveloping savory chicken and rice, all kissed with a hint of ketchup. Perfect for a cozy weeknight dinner or a special brunch treat.

Ingredients

  • 1 cup cooked rice
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 100 grams chicken breast, diced
  • 1 tablespoon ketchup
  • 2 large eggs
  • 1 tablespoon milk
  • to taste salt and pepper

Method

  1. 1

Heat the vegetable oil in a frying pan over medium heat.

  2. 2

Add the chopped onion and sauté until translucent.

  3. 3

Add the diced chicken and cook until no longer pink.

  4. 4

Stir in the cooked rice and ketchup, mixing well. Season with salt and pepper.

  5. 5

In a bowl, whisk together the eggs and milk, then season with a pinch of salt.

  6. 6

In a separate non-stick frying pan, pour the egg mixture and cook on low heat until the edges set but the center is still slightly runny.

  7. 7

Add the rice mixture onto one half of the omelette and carefully fold the other half over it.

  8. 8

Slide the omurice onto a plate and garnish with additional ketchup if desired.
