Savor the comforting flavors of Omo Tuo, a traditional Ghanaian dish made with fluffy rice and rich groundnut paste. Perfect for a cozy weeknight dinner, this dish warms the heart and satisfies the soul.

Ingredients

  • 2 cups rice
  • 4 cups water
  • 1 teaspoon salt
  • 1 cup groundnut (peanut) paste
  • 1 tablespoon palm oil
  • 1 piece pepper

Method

  1. 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

  2. 2

In a pot, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.

  3. 3

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the rice is cooked and the water is absorbed.

  4. 4

Once cooked, remove from heat and fluff the rice with a fork. Let it cool slightly.

  5. 5

Wet your hands with water, take a small portion of the rice, and shape it into a ball (about the size of a golf ball).

  6. 6

Serve the rice balls with groundnut paste on the side. Drizzle with palm oil if desired, and add fresh pepper for spice.

  7. 7

Enjoy your Omo Tuo as a traditional Ghanaian breakfast or brunch dish.
