Experience the heartwarming flavors of Russian cuisine with Olivye, a creamy potato salad loaded with tender chicken, vibrant peas, and a hint of mustard. Ideal for festive gatherings or a cozy family dinner.
IngredientsWhat you need
- 3 large potatoes
- 2 large carrots
- 4 large eggs
- 1 cup peas
- 200 grams boiled chicken breast
- 1 cup mayonnaise
- 1 tablespoon mustard
- to taste salt and pepper
Method
- 1
Boil the potatoes and carrots in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
- 2
While the potatoes and carrots cool, hard-boil the eggs in a separate pot for about 10 minutes. Once done, cool, peel, and chop them.
- 3
In a large bowl, combine the cooled potatoes and carrots, chopped eggs, peas, and boiled chicken.
- 4
Add mayonnaise and mustard (if using) to the mixture and stir gently to combine all ingredients evenly.
- 5
Season with salt and pepper to taste, mixing well again.
- 6
Transfer the Olivye salad to a serving dish and refrigerate for at least an hour before serving to allow the flavors to meld.
- 7
Serve chilled as a side dish or part of a festive meal.
