Ingredients

  • 500 grams pickled cucumbers
  • 1 liter vegetable broth
  • 200 grams potatoes
  • 1 medium onion
  • 1 tablespoon butter
  • 1 tablespoon dill
  • to taste salt
  • to taste black pepper

Method

    In a large pot, melt the butter over medium heat and add the chopped onion. Sauté until the onion becomes translucent.

    Add the diced potatoes to the pot and cook for about 3 minutes, stirring occasionally.

    Pour the vegetable broth into the pot and bring to a boil. Reduce heat and let simmer for 5 minutes or until potatoes are tender.

    Stir in the chopped pickled cucumbers and dill, and let the soup simmer for another 2-3 minutes.

    Season with salt and black pepper to taste before serving.
