Indulge in these hearty Nutty Rusks, a delightful blend of muesli, sunflower seeds, and pecans, perfect for a cozy breakfast or an afternoon snack with tea. Their crunchy texture and wholesome flavors make every bite a treat.
IngredientsWhat you need
- 1 kg Self Raising Flour
- 10 ml salt
- 10 ml Baking Powder
- 500 ml Muesli
- 250 ml Sunflower seeds
- 1 pkt Pecan nuts, chopped
- 125 ml coconut
- 500 ml bran flakes
- 500 ml brown sugar
- 2 eggs
- 500 g Melted margarine
- 500 ml Buttermilk or plain yoghurt
- 1 green apple, peeled and grated
Method
- 1
Preheat oven to 180 degrees C.
- 2
Combine dry ingredients, add sugar and mix well.

Beat eggs and add remaining ingredients. Add mixture to dry ingredients. Mix well.

Spoon into suitable baking tins.

Bake for 45 – 60 minutes. Switch off oven when cooked and allow to cool in oven.

Turn out and cut into rusk sizes of your choice.

Place rusks on a baking sheet and dry in an oven of 110 degrees C for 4 hours. Leave to cool in oven.
Notes
Delicious – beware addictive.
