- 1 kg potatoes
- 250 g all-purpose flour
- 1 large egg
- 1 tsp salt
- 1 tsp black pepper
- 4 cups tomato sauce
- 1 tbsp olive oil
- 50 g Parmesan cheese

Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.

Peel the potatoes and mash them until smooth. Allow the mashed potatoes to cool completely.

In a large bowl, combine the mashed potatoes, flour, egg, salt, and black pepper. Mix until a soft dough forms.

On a floured surface, divide the dough into sections and roll each section into a long rope about 1 cm thick. Cut into 2 cm pieces to form the ñoquis.

Using a fork, gently press each piece to create a ridged effect (optional) for better sauce adherence.

In a large pot of boiling salted water, cook the ñoquis in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
