Savor the comforting embrace of homemade Ñoquis, tender potato dumplings tossed in rich tomato sauce and topped with Parmesan. Ideal for a cozy weeknight dinner that warms the heart and delights the palate.

Ingredients

  • 1 kg potatoes
  • 250 g all-purpose flour
  • 1 large egg
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 cups tomato sauce
  • 1 tbsp olive oil
  • 50 g Parmesan cheese

Method

  1. 1

Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.

  2. 2

Peel the potatoes and mash them until smooth. Allow the mashed potatoes to cool completely.

  3. 3

In a large bowl, combine the mashed potatoes, flour, egg, salt, and black pepper. Mix until a soft dough forms.

  4. 4

On a floured surface, divide the dough into sections and roll each section into a long rope about 1 cm thick. Cut into 2 cm pieces to form the ñoquis.

  5. 5

Using a fork, gently press each piece to create a ridged effect (optional) for better sauce adherence.

  6. 6

In a large pot of boiling salted water, cook the ñoquis in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

  7. 7

In a separate pan, heat olive oil and add the tomato sauce. Simmer for a few minutes until warmed through.

  8. 8

Serve the ñoquis topped with the tomato sauce and sprinkle with grated Parmesan cheese.
