Ingredients

  • 1 cup chickpeas (dried)
  • 1 large onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic
  • 2 cups water
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley

Method

  1. 1

Soak the dried chickpeas in water overnight to soften them.

  2. 2

Drain and rinse the soaked chickpeas, then place them in a pot with 2 cups of fresh water.

  3. 3

Bring the chickpeas to a boil, then reduce the heat and let them simmer for about 30 minutes or until tender.

  4. 4

In a separate pan, heat the olive oil over medium heat and sauté the chopped onion until translucent.

  5. 5

Add the minced garlic and cumin to the onions, cooking for an additional minute until fragrant.

  6. 6

Once the chickpeas are tender, add the onion mixture to the pot along with black pepper and salt, stirring well.

  7. 7

Simmer the mixture for another 10 minutes to blend the flavors, then remove from heat.

  8. 8

Serve hot, garnished with chopped fresh parsley.
