- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 potato, peeled and diced potato
- 4 cups vegetable stock
- 2 cups fresh nettles, washed and stems removed
- 1 cup heavy cream, for serving

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and celery, and sauté until the onion is translucent, about 5 minutes.

Stir in the diced potato and cook for an additional 2-3 minutes.

Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes, or until the potatoes are tender.

Add the fresh nettles to the pot, cooking for an additional 5 minutes until they have wilted.

Use an immersion blender to purée the soup until smooth. If you don't have an immersion blender, transfer to a countertop blender in batches.

Season with salt and pepper to taste. Serve hot with a drizzle of heavy cream if desired.
