Indulge in the aromatic flavors of Nasi Uduk, a fragrant Indonesian coconut rice dish infused with kaffir lime and lemongrass. Perfect for a comforting weeknight dinner or a special gathering with friends.

Ingredients

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 2 pieces kaffir lime leaves
  • 2 pieces lemongrass stalks
  • 1 teaspoon salt
  • 1 tablespoon fried shallots
  • 2 pieces hard-boiled eggs

Method

    Rinse the jasmine rice under cold water until the water runs clear, then drain well.

    In a pot, combine the rinsed jasmine rice, coconut milk, water, torn kaffir lime leaves, bruised lemongrass, and salt.

    Bring the mixture to a boil over medium heat, then reduce to low heat and cover the pot.

    Cook for about 25 minutes, or until the rice is tender and the liquid is absorbed.
