Indulge in the fragrant allure of Nasi Liwet, a traditional Indonesian coconut rice dish infused with pandan, turmeric, and topped with crispy fried shallots. Perfect for a cozy weeknight dinner or a festive gathering.

Ingredients

  • 2 cups jasmine rice
  • 4 cups coconut milk
  • 2 leaves pandan leaves
  • 2 teaspoons salt
  • 1 tablespoon shallots
  • 1 tablespoon garlic
  • 1 teaspoon turmeric powder
  • 1 cup fried shallots

Method

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    In a large pot, combine the rinsed rice, coconut milk, salt, chopped shallots, chopped garlic, turmeric powder, and pandan leaves.

    Stir the mixture well, then bring it to a boil over medium heat.

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45-50 minutes, or until the rice is cooked and has absorbed the coconut milk.

    Once cooked, remove the pot from heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
