- 2 cups jasmine rice
- 2 cups coconut milk
- 1 teaspoon turmeric powder
- 1 stalk lemongrass
- 3 pieces kaffir lime leaves
- 1 teaspoon salt
- 1 tablespoon fried shallots
Method

Rinse the jasmine rice under cold water until the water runs clear. Drain well.

In a pot, add the rinsed rice, coconut milk, turmeric powder, bruised lemongrass, kaffir lime leaves, and salt.

Bring the mixture to a boil over medium heat, then reduce to low heat and cover the pot.

Cook for about 20 minutes or until the rice is tender and the liquid is absorbed.

Remove from heat and let it sit covered for an additional 10 minutes.
