  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 carrot carrot, diced
  • 2 eggs eggs, beaten
  • 3 tbsp sweet soy sauce (kecap manis)
  • 1 tbsp soy sauce
  • 1/2 cup green onions, sliced
  • to taste salt and pepper

Method

  1. 1

Heat the vegetable oil in a large skillet or wok over medium-high heat.

  2. 2

Add the minced garlic and diced onion, sautéing until fragrant and the onion is translucent.

  3. 3

Stir in the diced carrot and cook for an additional 2 minutes until slightly tender.

  4. 4

Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.

  7. 7

  8. 8

Serve hot, optionally garnished with more green onions or fried shallots.
