Experience the warmth of Persian cuisine with Nan-e Barbari, a beautifully crusty bread infused with olive oil and topped with sesame and black caraway seeds. Ideal for sharing at family gatherings or enjoying fresh with your favorite dips.

- 1 kg all-purpose flour
- 600 ml water
- 10 g dry yeast
- 15 g salt
- 30 ml olive oil
- 1 tbsp sesame seeds
- 1 tbsp black caraway seeds
- 1 tbsp flour
Method

In a bowl, dissolve the dry yeast in warm water and let it sit for about 10 minutes until frothy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Mix until a dough forms, then knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Shape the dough into a ball and place it in a greased bowl. Cover with a damp cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.

Preheat the oven to 250°C (482°F). Once risen, punch down the dough and divide it into equal pieces (about 10).

Shape each piece into an oval about 1 cm thick and place on a baking sheet lined with parchment paper. Use your fingers to create grooves on the top of each piece.

Sprinkle sesame seeds and black caraway seeds over the tops and let them rest for another 20 minutes.

Bake in the preheated oven for about 20-25 minutes, or until golden brown. Remove from oven and let cool slightly before serving.
