Indulge in Nakshi Pitha, a traditional Bangladeshi treat made with rice flour, sweet coconut, and jaggery, delicately spiced with cardamom. Perfect for festive gatherings or cozy afternoons with tea.

Ingredients

  • 2 cups rice flour
  • 1 cup boiling water
  • 1/2 cup grated coconut
  • 1/2 cup jaggery
  • 1/4 teaspoon salt
  • 1 tablespoon oil
  • 1/2 teaspoon cardamom powder

Method

    In a large bowl, combine the rice flour and salt. Gradually add boiling water and mix until a soft dough forms.

    In another bowl, mix the grated coconut, jaggery, and cardamom powder until well combined.

    Take a small portion of the rice dough and flatten it in your palm. Place a spoonful of the coconut and jaggery mixture in the center.

    Carefully fold the edges of the dough over the filling to seal it. Shape it into a small round or oval pitha.

    Heat a non-stick pan over medium heat, grease it lightly with oil, and place the pithas on it.
