Savor the rich flavors of Mumbar, a traditional Middle Eastern dish featuring tender lamb intestines stuffed with spiced rice and ground meat. Perfect for a cozy family dinner or a special gathering with friends.

Ingredients

  • 500 grams lamb intestines
  • 250 grams rice
  • 200 grams ground lamb or beef
  • 1 medium onion
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Method

    Rinse the lamb intestines thoroughly under cold water and soak them in a bowl of water with a little vinegar for about 30 minutes. This helps to clean and deodorize them.

    In a large bowl, combine the washed rice, ground lamb or beef, chopped onion, tomato paste, cumin, black pepper, and salt. Mix well until all ingredients are evenly incorporated.

    Stuff each cleaned intestine with the rice and meat mixture, leaving enough space for the rice to expand during cooking. Tie the ends securely with kitchen twine.

    Place the stuffed intestines in a large pot and cover them with water. Bring to a boil, then reduce the heat to low and simmer for about 1.5 hours, or until the intestines are tender.

    Once cooked, remove the mumbar from the pot and allow it to cool slightly. Cut them into pieces or serve whole.
