- 1 cup rice
- 2 cups water
- 2 medium onions
- 1 teaspoon cumin
- 2 tablespoons olive oil

In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 15 minutes until lentils are tender but not mushy.

While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 10-15 minutes.

Once the lentils are cooked, add the rinsed rice, cooked lentils, cumin, salt, and black pepper to the pot. Stir to combine.

Add an additional cup of water to the pot. Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes until the rice is tender and the water is absorbed.

Fluff the mujaddara with a fork and adjust seasoning if necessary. Serve topped with caramelized onions.
