Savor the earthy goodness of Mujaddara, a comforting Middle Eastern dish of spiced lentils and rice topped with caramelized onions. Ideal for a cozy weeknight dinner or a delightful vegetarian feast.

Ingredients

  • 1 cup green lentils
  • 1 cup rice
  • 2 cups water
  • 2 medium onions
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • salt to taste salt
  • black pepper to taste black pepper

Method

  1. 1

In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 15 minutes until lentils are tender but not mushy.

  2. 2

While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 10-15 minutes.

  3. 3

Once the lentils are cooked, add the rinsed rice, cooked lentils, cumin, salt, and black pepper to the pot. Stir to combine.

  4. 4

Add an additional cup of water to the pot. Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes until the rice is tender and the water is absorbed.

  5. 5

Fluff the mujaddara with a fork and adjust seasoning if necessary. Serve topped with caramelized onions.

  6. 6

Enjoy warm as a comforting breakfast or brunch dish!
