Experience the vibrant flavors of Chile with Mote con Huesillos, a refreshing summer drink made with sweet dried peaches, cracked wheat, and a hint of cinnamon. Perfect for warm afternoons or as a unique dessert at gatherings.

Ingredients

  • 1 cup mote (cracked wheat)
  • 4 cups water
  • 1 cup dried peaches (huesillos)
  • 1 cup brown sugar
  • 1 cinnamon stick cinnamon stick
  • 1 cup lemon juice

Method

    In a pot, boil 4 cups of water. Once boiling, add the soaked mote and cook for about 10 minutes until tender.

    In another pot, combine 1 cup of water, the dried peaches, brown sugar, and the cinnamon stick. Bring to a simmer and cook for about 5 minutes.

    Once the mote is cooked, drain and rinse it under cold water.

    Remove the cinnamon stick from the peach mixture and set aside.

    In serving glasses or bowls, layer the cooked mote and the peach mixture, including some of the syrup.

    If desired, drizzle with lemon juice for an extra tangy flavor.
