Savor the earthy flavors of Morogo, a traditional African dish featuring tender wild spinach sautéed with garlic and onions, served with creamy maize meal. Ideal for a comforting weeknight dinner or a vibrant side at gatherings.

Ingredients

  • 2 bunches morogo (African spinach or wild spinach)
  • 1 medium onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 0.5 cup water
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup maize meal (pap)

Method

    Rinse the morogo thoroughly under running water to remove any dirt or sand.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

    Add the minced garlic and sauté for an additional minute until fragrant.

    Add the morogo to the pot, season with salt and black pepper, and stir well.

    Pour in the water, cover the pot, and allow the morogo to steam for about 10-15 minutes until wilted and tender.

    If using, prepare the maize meal (pap) according to package instructions while the morogo is cooking.
