- 1 kg tripe (beef or pork)
- 1 large onion
- 3 cloves garlic
- 2 medium carrots
- 1 cup potatoes
- 1 tbsp ground cumin
- 1 tbsp oregano
- 6 cups beef broth
- 1 cup lime juice
Method

In a large pot, bring water to a boil and add the tripe. Boil for about 10 minutes to help remove any impurities. Drain and rinse.

In the same pot, combine the cleaned tripe, beef broth, chopped onion, and minced garlic. Bring to a simmer and cook for 2 hours until the tripe is tender.

Add the diced carrots and potatoes to the pot along with the cumin and oregano. Stir well and continue to simmer for an additional 30 minutes.

Check the seasoning and adjust with salt and pepper to taste. If necessary, add more broth or water to achieve your desired consistency.

Once cooked, remove from heat and let it rest for 10 minutes. Serve hot with lime juice on the side.
