Dive into a hearty bowl of Mondongo, a traditional Latin American tripe stew bursting with flavors from garlic, cumin, and fresh lime. Perfect for cozy weeknight dinners or gatherings with loved ones.

Ingredients

  • 1 kg tripe (beef or pork)
  • 1 large onion
  • 3 cloves garlic
  • 2 medium carrots
  • 1 cup potatoes
  • 1 tbsp ground cumin
  • 1 tbsp oregano
  • 6 cups beef broth
  • 1 cup lime juice

Method

  1. 1

In a large pot, bring water to a boil and add the tripe. Boil for about 10 minutes to help remove any impurities. Drain and rinse.

  2. 2

In the same pot, combine the cleaned tripe, beef broth, chopped onion, and minced garlic. Bring to a simmer and cook for 2 hours until the tripe is tender.

  3. 3

Add the diced carrots and potatoes to the pot along with the cumin and oregano. Stir well and continue to simmer for an additional 30 minutes.

  4. 4

Check the seasoning and adjust with salt and pepper to taste. If necessary, add more broth or water to achieve your desired consistency.

  5. 5

Once cooked, remove from heat and let it rest for 10 minutes. Serve hot with lime juice on the side.

  6. 6

Enjoy your Mondongo with avocado slices and white rice for a complete meal.
