Indulge in the delightful chewiness of homemade mochi, a beloved Japanese treat made with sweet rice flour and filled with smooth red bean paste. Perfect for a cozy dessert or a unique addition to your next gathering.

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup granulated sugar
  • 3/4 cup water
  • 1/4 cup cornstarch
  • 1/2 cup red bean paste (anko)
  • 1 teaspoon vanilla extract

    In a mixing bowl, combine sweet rice flour and granulated sugar.

    Gradually add water to the mixture, stirring until smooth.

    Transfer the mixture to a microwave-safe dish and cover it with plastic wrap.

    Microwave on high for 2 minutes, then stir. Repeat this process two more times, for a total of 6 minutes of cooking time.

    Once cooked, dust a clean surface with cornstarch, and transfer the mochi dough onto it while it's still warm.
