Indulge in the creamy sweetness of Mishti Doi, a traditional Bengali dessert made with rich full-fat milk, sugar, and a hint of cardamom. Perfect for festive occasions or a comforting end to a weeknight meal.

- 1 liter full-fat milk
- 1 cup sugar
- 1 cup plain yogurt
- 1 teaspoon cardamom powder
- 1 pinch saffron strands
- 1 tablespoon water
Method

In a heavy-bottomed pot, heat the full-fat milk on medium flame until it comes to a boil. Stir occasionally to prevent it from sticking.

Once the milk has boiled, reduce the heat to low and let it simmer until it reduces to about 3/4 of its volume. This should take around 20-25 minutes.

In a separate bowl, mix the sugar and cardamom powder together. If using saffron, dissolve it in the tablespoon of water.

Once the milk is reduced, remove it from the heat and let it cool down to room temperature. Then, stir in the sugar mixture and yogurt until fully combined.

If using saffron, add it to the mixture and stir gently.

Pour the mixture into earthen pots or serving bowls, cover with a cloth, and keep in a warm place for 6-8 hours or overnight to set.

Once set, refrigerate the Mishti Doi for a few hours before serving.

Serve chilled, optionally garnishing with more cardamom or nuts if desired.
