- 2 cups semolina flour
- 1 cup water
- 1 cup vegetable oil
- 1 cup onions, finely chopped
- 1 cup tomatoes, finely chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
Method

In a large bowl, mix the semolina flour and salt. Gradually add water until a soft dough forms. Knead for about 5 minutes, then cover and let it rest for 15 minutes.

In a frying pan, heat a tablespoon of vegetable oil over medium heat. Add the chopped onions and cook until translucent.

Add the chopped tomatoes, black pepper, and salt to the pan. Stir and cook for another 5 minutes until the mixture thickens. Remove from heat and let it cool slightly.

Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a thin circle on a floured surface.

Place a spoonful of the filling in the center of each circle. Fold the edges over to enclose the filling, forming a pocket.

In the same frying pan, heat additional oil over medium heat. Fry each filled pocket for about 2-3 minutes on each side until golden brown.

Remove from the pan and place on paper towels to drain excess oil. Serve warm.
