- 2 cups semolina flour
- 1 cup water
- 1 teaspoon salt
- 1 cup ground meat (beef or lamb)
- 1 cup onions, finely chopped
- 1 cup tomatoes, chopped
- 2 tablespoons olive oil
Method

In a large bowl, mix the semolina flour and salt. Gradually add water and knead until you form a smooth dough. Cover and let it rest for about 15 minutes.

In a pan, heat 1 tablespoon of olive oil over medium heat, then sauté the chopped onions until translucent.

Add the ground meat (if using) and cook until browned. Stir in the chopped tomatoes and cook until the mixture thickens. Season with salt and pepper to taste. Set aside to cool.

Divide the dough into equal portions and roll each into a ball. Flatten each ball into a thin circle, about 10 inches in diameter.

Place a spoonful of the filling in the center of each circle. Fold the edges over the filling to create a pocket, sealing well.

Heat the remaining olive oil in a skillet over medium heat. Cook each Mhadjeb for about 5-7 minutes on each side until golden brown and crispy.
