Savor the vibrant flavors of Turkish Menemen, a delightful dish of scrambled eggs mingled with sautéed onions and ripe tomatoes, spiced with red pepper flakes. Perfect for a cozy brunch or a quick weeknight dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium tomatoes, peeled and chopped
  • 3 large eggs
  • 1 teaspoon red pepper flakes
  • salt to taste salt
  • black pepper to taste black pepper
  • fresh parsley for garnish fresh parsley, chopped

Method

  1. 1

Heat the olive oil in a skillet over medium heat.

  2. 2

Add the diced onion and sauté until it becomes translucent, about 3-4 minutes.

  3. 3

Stir in the chopped tomatoes and cook for another 5 minutes until the mixture thickens slightly.

  4. 4

Add the red pepper flakes, salt, and black pepper, stirring to combine.

  5. 5

Crack the eggs into the skillet directly over the tomato mixture. Stir gently to combine, or leave them whole for sunny-side-up eggs.

  7. 7

Remove from heat and garnish with fresh parsley.

  8. 8

Serve warm with crusty bread for dipping.
