Savor the comforting flavors of Mejadra, a Middle Eastern dish of spiced lentils and rice topped with caramelized onions. Perfect for a cozy weeknight dinner or a delightful vegetarian feast.
IngredientsWhat you need
- 1 cup green lentils
- 1 cup rice
- 2 medium onions
- 3 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- 4 cups water
Method
- 1
In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté until they become golden brown.
- 2
Once the onions are browned, remove half of them and set aside for garnishing later.
- 3
Add the lentils, rice, cumin, coriander, salt, and water to the pot with the remaining onions. Stir to combine.
- 4
Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the rice and lentils are tender and the water is absorbed.
- 5
Remove from heat and let it sit, covered, for an additional 5 minutes.
- 6
Fluff the mejadra with a fork and serve warm, garnished with the reserved fried onions.
