Experience the rich flavors of North African cuisine with this succulent Mechoui, featuring tender lamb infused with aromatic spices and fresh herbs. Perfect for a festive gathering or a special weekend feast.
IngredientsWhat you need
- 1 whole lamb, preferably leg or whole lamb
- 4 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 bunch fresh herbs (such as thyme or rosemary)
- 1 lemon juiced
Method
- 1
Prepare the lamb by cleaning it and removing any excess fat.
- 2
In a bowl, mix olive oil, salt, black pepper, cumin, paprika, and lemon juice to create a marinade.
- 3
Rub the marinade all over the lamb, ensuring it is well coated. If using, add fresh herbs inside the cavity.
- 4
Place the marinated lamb in a cool place for at least 2 hours or overnight for best results.
- 5
Prepare a large barbecue or spit for cooking the lamb. Once ready, put the lamb on the spit or grill over medium heat.
- 6
Cook the lamb for about 3 hours, turning occasionally and basting with remaining marinade to keep it moist.
- 7
Once cooked through and the meat is tender, remove the lamb from the grill and let it rest for 15 minutes before carving.
- 8
Serve the sliced lamb with bread, salad, or traditional sides of your choice.
