  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 medium tomatoes, chopped
  • 1 cup coconut milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon curry powder
  • 1 cup water
