Savor the rich flavors of North African cuisine with Mchewek, a hearty stew of tender lamb or beef simmered with aromatic spices and roasted potatoes. Ideal for a cozy weeknight dinner or a gathering with friends.

- 500 grams lamb or beef, cut into cubes
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt to taste salt
- 500 grams potatoes, peeled and cut into wedges
- 1 cup water
Method

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.

Add the minced garlic and cook for an additional minute until fragrant.

Stir in the lamb or beef cubes, and brown on all sides.

Add the ground cumin, ground coriander, paprika, and salt. Mix well to coat the meat evenly with the spices.

Pour in the water, bring to a boil, then reduce heat to low and cover the pot. Simmer for about 30 minutes.

After 30 minutes, add the potato wedges to the pot. Stir gently to combine, then cover and cook for another 30 minutes or until the meat and potatoes are tender.

Once cooked, check for seasoning and adjust salt if necessary. Serve hot and enjoy your Mchewek!
