Savor the flavors of Iraq with Masgouf, a traditional grilled carp marinated in olive oil, garlic, and spices. This dish is perfect for a summer gathering or a cozy weeknight dinner, bringing a taste of the river to your table.

Ingredients

  • 1 kg fresh carp
  • 3 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon ground cumin
  • 2 lemons juiced
  • 4 cloves garlic
  • 1 bunch fresh parsley

Method

    Clean the carp thoroughly and cut it open from the belly to the tail, keeping it in one piece.

    In a bowl, mix the olive oil, salt, black pepper, ground cumin, lemon juice, and minced garlic to create a marinade.

    Rub the marinade all over the fish, making sure to get it into the cuts and inside the cavity.

    Preheat the grill to medium heat. Place the fish on a grilling rack to ensure it cooks evenly.
