Indulge in the comforting flavors of Austrian Marillenknödel, soft potato dumplings filled with sweet apricots and rolled in buttery breadcrumbs. Ideal for a cozy dessert or a special weekend treat with loved ones.

- 500 g potatoes
- 200 g all-purpose flour
- 1 large egg
- 1 pinch salt
- 8 pieces apricots
- 2 tbsp sugar
- 100 g breadcrumbs
- 50 g butter

Boil the potatoes in salted water until soft, about 20 minutes. Drain, peel, and let cool slightly.

Mash the potatoes until smooth. Allow to cool completely before adding flour, egg, and salt.

Knead the mixture gently until a smooth dough forms. Divide the dough into 8 equal pieces.

Flatten each piece of dough, place an apricot in the center, and wrap the dough around the apricot to form a ball, ensuring it is sealed.

Bring a pot of salted water to a gentle simmer. Carefully add the knödel and cook for about 10-15 minutes, until they float to the surface.

In a separate pan, melt the butter and toast the breadcrumbs until golden brown.

Once the knödel are cooked, remove them from the water, drain, and roll them in the toasted breadcrumbs.
