- 1 kg chicken, cut into pieces
- 2 cups water or chicken broth
- 2 medium onions, sliced
- 2 medium eggplants, sliced
- 2 medium potatoes, sliced
- 2 teaspoons ground cumin
- 2 teaspoons ground turmeric
- Salt and pepper to taste salt and pepper

Method

In a large pot, heat olive oil over medium heat. Add the sliced onions and sauté until golden brown.

Add the chicken pieces to the pot, season with salt, pepper, cumin, and turmeric, and cook until browned on all sides.

Layer the fried or roasted eggplants and potatoes over the chicken. Pour in the soaked rice evenly over the vegetables.

Add water or chicken broth, ensuring that the rice is just covered. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.

After 30 minutes, remove the pot from heat and let it sit, covered, for an additional 10 minutes.
