Indulge in the flaky, golden layers of Malawach, a delightful Yemeni flatbread that’s perfect for breakfast or a cozy dinner. Serve it warm with honey or spicy sauces for a comforting treat any time of day.
IngredientsWhat you need
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 cup water
- 1/4 cup unsalted butter
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
Method
- 1
In a large bowl, combine the sifted flour, salt, and baking powder. Mix well.
- 2
Gradually add the water to the flour mixture, stirring until a dough forms.
- 3
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- 4
Divide the dough into 4 equal pieces and roll each into a ball. Flatten slightly and brush with melted butter.
- 5
Cover the dough balls with a damp cloth and let them rest for 15 minutes.
- 6
On a floured surface, roll each ball into a thin circle. Fold the circle into a pleated shape and then roll it into a coil.
- 7
Heat vegetable oil in a skillet over medium heat. Fry each coil for about 3-4 minutes on each side until golden brown and crispy.
- 8
Serve hot, optionally with zhug or tomato sauce for dipping.
